Pineapple Flower Cupcakes

Aren't they pretty?  And so easy. 

To make these pretty pineapple flowers all you have to do it get a pineapple, cut the top and bottom off.  Then trim off the sides.  Then go around and cut off any of the little ugly bits that are left.  Now turn your oven on at about 200 degrees.  Carefully cut the pineapple (core and all) into the thinnest possible slices you can.  So you now have pineapple circles.  Place your circles on a cookie sheet that has parchment paper on it and bake them.  Really you a more like drying them.  I think it took mine about an hour on each side, but check them after 30-45 mins and flip them over.  They will curl up a little in the drying process, but I would suggest placing them in cupcake pans overnight while they cool.  Then just stick them on your cupcake.  One really nice thing about these is that they can be made ahead of time.
